1/2 cup all-purpose flour
1/2 cup quick cooking oats
1 tabespoon stevia
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup almond milk
1 teaspoon vanilla extract
2 egg whites
Place flour, oats, stevia, baking powder, baking soda, salt, almond milk, vanilla and egg in a food processor and puree until smooth.
Heat pan over a medium high heat. Scoop the batter onto the griddle, using approximately 2 tablespoons for each pancake. Brown on both sides and serve hot. You can also add chopped apples or fresh blueberries to your pancake batter. My favorite is Apple with a little sprinkle of cinnamon on top. Serve with sugar free maple syrup.

1 medium head (about 24oz) cauliflower, rinsed
1 tbsp sesame oil
2 egg whites
1 large egg
Fried rice seasoning package
1/2 small onion, diced fine
1/2 cup frozen peas and carrots
2 garlic cloves, minced
5 scallions, diced, whites and greens separated
3 tbsp soy sauce, or more to taste (Tamari for Gluten Free)
Remove the core and let the cauliflower dry completely. Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous - don't over process or it will get mushy. Set aside and repeat with the remaining cauliflower. Combine egg and egg whites in a small bowl and beat with a fork. Heat a large saute pan or wok over medium heat and spray with oil. Add the eggs ad cook, turning a few times until set; set aside.
Add the sesame oil and saute onions, scallion whites, peas and carrots and garlic about 3 to 4 minutes, or until soft.
Raise the heat to medium-high. Add the cauliflower "rice" to the saute pan along with soy sauce. Mix, cover ad cook approximately 5 to 6 minutes, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside. Add the egg then remove from heat and mix in scallion greens.

1/4 cup mustard
1 cup quick cooking oats
1/2 tsp ground cumin
1/2 tsp dried thyme
2 tsp black peper
1 tsp salt
2 tbsp garlic powder (2 cloves minced)
1 small onion chopped
1 red bell pepper chopped
Preheat oven to 375 degrees.
Spray mini muffin pan with canola or olive oil.
Mix all your ingredients together in one large bowl.
Roll the mixture into balls and place in muffin pan.
Bake for 40 minutes.
Makes 24 mini muffins.
1 1/2 cup whole wheat flour
2/3 cup stevia
2 1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup oats
4 egg whites
1/3 liquid coconut oil
1 cup mashed bananas
1 cup blueberries
Combine the first five ingredients together in a mixing bowl.
Mix the blueberries with the dry ingredients.
In a separate bow mix the eggs, oil, and bananas.
Mix the dry and wet ingredients together with a fork.
Pour batter into a loaf pan. Bake for an hour at 350 degrees.
